To All of the Food Coach Me blog Followers
My name is Kat Akers, and I am Steph’s soon to be sister-in-law! First, let me start by saying what a wonderful woman Steph is and how honored I am with the fact that she will officially be a part of our family in a few short months! She is obviously very talented, if you have tried any of the recipes on this blog (and I have!) and definitely makes my brother step up his game! :)
All this being said, I have information both Steph and my brother would like for me to share with you just so you know what is going on and why the posts haven’t been coming as consistently recently:
A week ago Sunday, Steph and Kevin were in a horrible car wreck. Kevin was taken via ambulance to a local hospital but Steph had to be life flighted to another hospital with a trauma 1 unit. Kevin suffered from a broken nose and abrasions to his face, causing him to admitted for a few days and undergo plastic surgery and require around 140 stitches. He has thankfully been release and able to visit Steph. He even went to work today! Talk about persistence!
The real persistence, however, is shown by Steph. If you haven’t figured it out by now, she was in worse shape. There were many scary moments for our families over the past week, but she is now talking and even joking! However, even with the leaps and bounds she has made, she has a long way to go.
The reason they asked me to write this post is not only to inform you of why blogging has been halted for awhile, but also to ask for your prayers (which we covet deeply). Steph has a procedure coming up this Tuesday for her damaged right carotid which, as with any surgery, has some risk. We ask that you pray that her charts check out tomorrow morning in order to even have the surgery, and that when the procedure does happen God guides the hands of the doctors and that there are no complications.
There will be many specific prayer requests beyond this that will come up, but I would like to leave you with a few overarching suggestions for the time being:
– Pray for ease of pain, for both Kevin and Steph. Steph has especially struggled with pain in her head.
– Pray for any upcoming procedures or scans that Steph may undergo. Pray for continued healing and an increase in positive news as time goes on. Pray for the hands, eyes, and ears of her doctors, that they are able to find or diagnose things quickly and effectively if needed.
– Pray for Steph’s family, that they continue to display the strength and diligence they have exhibited through this whole process. Pray also, that they are allotted those private moments to be weak when they need to be.
– Just pray for this experience overall. There is no reason anyone should have to go through this, but especially two such wonderful people. Pray that all of us can continue to see the daily miracles taking place and not lose sight of the fact that there is a bigger purpose to all this.
I am sorry this post is so long, but I just wanted to make sure I adequately covered everything. Thank you so much for following, and we hope you continue to do so! Feel free to leave sweet and encouraging notes on this website or on the Food Coach Me Facebook page!
Thank you for your thoughts and prayers!

Kat, thanks so much for letting us know what is going on with Steph and Kevin. I pray for both of their recoveries and all their wounds to heal. She guides a lot of people on the right track and inspires the lives of so many and can certainly win this fight as well. Please keep us updated on her progress.
Steph, I’ll excuse you for missing my diet appointment next week, but I don’t know if I can excuse you for another month….. Only kidding. Get better!!!!
Thanks Kathleen for posting this. If you are reading this please pray for quick and full healing for my beautiful fiancée.
Can we get a quick update?
