Bun-less Mushroom Swiss Burger | Postop Bypass and Sleeve Recipe

 

When I think through my “quick and easy” weeknight meals, I often overlook burgers. But I really should stop that!

For whatever reason, I think of burgers as time consuming. While they can be (especially ones that have lots of chopped veggies inside the patty…) a basic burger patty with a variation of toppings can actually be a super quick meal.

It’s an AWESOME post-op recipes because you can divide the portions to small patties. You can also change up the flavors so you don’t get tired of leftovers! It also doesn’t hurt that it’s PACKED WITH PROTEIN and a super filling one at that.

But hey!! Take those tiny bites and eat slowly to tolerate the density in this lean ground beef. Your pouch with thank you :)

A simple burger with a fun lineup of toppings. A bit of hot sauce in the mayo. A thin slice of swiss cheese. Freshly sautéed mushrooms.

Ingredients

  • 1 lb 93% lean ground beef
  • 1/4 tsp each salt and pepper
  • 2 tbsp lowfat mayo
  • 5 "shakes" hot sauce ex: tabasco®
  • 2 (one ounce) slices swiss cheese divided for 6 burgers
  • 1 package sliced portabello mushrooms

Instructions

  • Preheat grill pan or outdoor grill to medium heat. Meanwhile, divide ground beef into 6 small patties. Season each side with salt and pepper.
  • Cook burger patties for about 3 minutes per side. After 2 minutes on the second side, add swiss cheese.
  • In a separate small skillet, while burgers are cooking, sauté sliced mushrooms over medium high heat, stirring every minute for about 6-8 minutes or until visibly cooked.
  • In a small bowl, mix together low-fat mayo and hot sauce.
  • Remove cheeseburgers from heat. Divide mayo mixture over the 6 small patties and top with mushrooms. Serve with a non-starchy vegetable such as green beans or asparagus.
