Sugar-Free Cucumber & Mint Limeade
Ahhhhhhhh.
Excuse me. I just took a refreshing drink of a cucumber & mint limeade. And I am relaxed.
I found an article in a Rachael Ray magazine about a Cucumber & Mint Limeade, which sounded delicious, but included a cup of sugar. I wondered….could I? Can I? Would this taste any good without sugar?
I got started, and realized I didn’t really follow the recipe. But still created something delicious and refreshing! No sugar. No calories. No guilt!
Let’s get real for a minute here. It’s summer, and I know what you want. You want, a drink. Ahem, an adult drink. (Okay fine, that might not be just a summertime request.) So here it is. My first blog post on an alcoholic option. You thought it would never happen, didn’t you??
To spike this beverage: add a splash of vodka or gin. Yeah, I realize splash means something different to all of us. I’m giving you freedom to interpret…
Another way to add some pep in this drink: use sparkling water. Except my weight-loss surgery friends, stick with the non-carbinated version.
Sugar-Free Cucumber & Mint Limeade
Ingredients
- 1 large lime
- 1 cup water
- 3 packets natural no calorie sweetener ex: Stevia
- 8 cubes ice
- 1 cup cold water
- 1/4 cup fresh mint
- 1/2 cup cucumber slices
Instructions
- In a saucepan put water, stevia, 1 tbsp zest from the lime and all the juice from the lime to a boil. Stir occasionally, add half the mint and continue to let boil about 5 minutes. Remove from heat and let cool slightly. Then move sweetened mint-lime water to refrigerator to chill further.
- In a medium pitcher or two serving glasses add remaining mint & cucumber slices.
- When mint-lime water is cooled, add ice to the pitcher (or glasses) and add sweetened water. Add remaining cold water to dilute the mixture. Serve.
