Slow Cooker Pork with Apples and Carrots
Alas, one of my all time favorite slow cooker meals. The truth is, you cannot have too many slow cooker meals. Sometimes I wonder if I should have more slow cookers than pans. Hmmm…If only they were smaller.
Anyhow, this is a tasty meal to change up the pace from the same ol’ grilled chicken meals. And trust me, I love grilled chicken meals….but you gotta change it up from time to time! I’ve made this recipe several different ways. You could skip the sage but I do love the added flavor and aroma. You can use any kind of apples you’d like but I do recommend using the apples more for flavor but not eating much of them. They make the pork moist and flavorful and a bite here or there is fine, however, skipping most of the apples will keep your carb intake down.
My personal preference is to layer the pork in between the apples to prevent to much dryness. It definitely helps!
Slow Cooker Pork with Apples and Carrots
Ingredients
- 4 boneless pork chops
- 2 apples, cored and sliced
- 1 bag baby carrots
- 2 tbsp sweetener ex: Truvia, Splenda
- 6 fresh sage leaves
Instructions
- Place half of apple slices in the bottom of a slow cooker. Top with pork. Add remaining apple slices.
- Sprinkle with cinnamon and sweetener generously, per your preference. Add sage leaves for extra flavor. Add baby carrots on top.
- Cook on low for 4-6 hours; or more depending on the thickness of the pork.
