Sautéed Ranch Bell Peppers
Bariatric surgery patient or not….the hunt for healthy vegetable side dishes that aren’t canned green beans is a real struggle.
I love adding vegetables to my protein entree but doesn’t it feel like all the energy goes into the entree that you don’t really want to make a whole other recipe for a side dish?
I’m all about an easy side veggie and usually use my microwave steamer to steam frozen green beans or baby carrots. Even a bag of pre-chopped cauliflower steamed in the microwave, drained, add salt and pepper and some Laughing Cow Cheese and use a hand blender for creamy mashed cauliflower fast! Bell peppers are another favorite of mine. I usually opt to just do the slicing myself but you can buy pre-sliced bell peppers are most grocery stores and there is no judgement for getting the easy option!
All I did this time around was added some extra flavor with Ranch seasoning. I made this recipe the first time and added the ranch while it was cooking but the flavor wasn’t as strong. I think it stayed in the pan more than adhered to my peppers! I suggest adding the Ranch after sautéing the peppers.
Sautéed Ranch Bell Peppers
Ingredients
- 2 green peppers, cut into strips
- 2 tbsp ranch seasoning
- 1/4 tsp sea salt
- 1/4 tsp black pepper
Instructions
- Heat a nonstick skillet to medium high heat. Spray with light cooking spray or olive oil.
- Add bell peppers and cook, stirring occasionally, until tender. About 10 minutes. Remove from heat to medium bowl.
- Add ranch seasoning, salt and pepper. Toss together and serve.
