I really love the texture that zucchini can provide a meat dish.

You may already know, zucchini has a super high water content. Therefore, it usually needs to be squeezed out or “sweated” by sprinkling some salt on the zucchini and dabbing with paper towels.

This is true if you make a zucchini lasagna or if you use it in a meatloaf or meatballs.

Even with all the work to get the water out…it will still have a good amount of water. However, that’s a great way to keep moisture inside the meat!

I love how quick these turkey burgers are to make and the red onion adds extra flavor. The zucchini adds a bit of green and some fiber plus the moisture content as I’ve described!

I often find I don’t need a sauce when I use zucchini, however these burgers are yummy with a little dijon mustard, some bibb lettuce (my personal favorite) and fresh tomato slices.

Zucchini Turkey Burgers

Ingredients

  • 1 lb 93% lean ground turkey
  • 1 cup zucchini, grated and squeezed of liquid approximately half a zucchini
  • 3/4 cup reduced fat grated parmesan cheese
  • 1 egg
  • 2 tbsp red onion, diced
  • 1/4 tsp each salt and pepper
  • 5 leaves Bibb lettuce
  • 5 slices tomato

Instructions

  • Spray grates of an outdoor with cooking spray. Heat to medium-high heat.
  • Meanwhile, add ground turkey, zucchini, parmesan cheese, egg, red onion and salt and pepper in a large bowl. Combine well and form into 5 patties.
  • Add to grill and cook about 4-5 minutes per side or until internal temperature reaches 160. Remove from grill and let cool slightly.
  • Serve on bibb lettuce with tomato slice on top.

Notes

This recipe makes 4 servings. Each serving provides an estimated 23 grams protein, 5 grams carbohydrate and 10 grams fat.
