Sun Dried Tomato & Feta Chicken Bake
Ready for some flavor change in your baked chicken dinner? We loved this meal so much, I made it twice in a week! This meal is packed with protein and perfect for weight-loss surgery patients. If you had the Gastric Sleeve, Gastric Bypass or Gastric Banding surgery…enjoy this meal using tiny bites maybe even with a cocktail fork and eating slowly – ideally 20 to 30 minutes for your meal.
Add a vegetable such as steamed carrots or cherry tomatoes! This brings in flavor change, texture changes and some fiber. I would recommend having two bites of protein (chicken) to every one bite of your veggie!

Ingredients
- 1 lb boneless, skinless chicken breast
- 3 tbsp sun dried tomatoes, rinsed well and chopped
- 3 cloves garlic, pressed or minced
- 2 tbsp dried basil
- 1/4 tsp each salt and pepper
- 1/2 cup feta cheese crumbles (optional)
Instructions
- Preheat oven to 375.
- Place chicken in the bottom of a baking dish and toss with basil, salt, pepper and garlic to coat.
- Spread a layer of sun-dried tomatoes over each chicken breast. Cover dish with a piece of foil.
- Bake for 20 minutes then remove foil and bake for another 15 minutes or until chicken is cooked through (165F).
- Remove from oven and add feta to each chicken breast, if using. Let rest two minutes before serving.

I love sundried tomatoes so I was looking forward to this one. My whole house smelled amazing as this was baking. I overcooked it a little so I was a little disappointed in the chicken being a little dry, but the topping and the creaminess of the feta kind of counter-acted it, and it was great. It was so easy to put together and well worth all the good smells in the house and the slightly garlicky, slightly tart, slightly creamy flavors in the topping.
