Note to postop patients! Because of the sugar in the strawberries, be sure to have some protein on your stomach before enjoying this little treat. Even fruit can spike your blood sugars or cause abdominal discomfort if you don’t have protein to blunt the spike of the sugar :)

Ahem…summer night SWEETS are calling!
This is the time of year we’ve all been waiting for. Mostly. With the sunshine and the long hours, I know what it all leads to. I don’t live under a rock people! It’s the best time of the year for Ice Cream!!!!

Okay I’ll take it easy. I’m just so excited to share with you my latest sweet treat concoction and especially just in time for the summer!
I had a vision in mind for this recipe but just to be sure I googled how most other recipes for Strawberry Sorbet are made. They all contained sugar, which I knew would be the case. They also all required way too much equipment. At first I got out my Food Processor, but then noticed people use Ice Cream Makers…so I got that out instead. Then I thought about it and felt like there had to be an easier way.
I am blessed to be the owner of a VitaMix Blender (as a humble recipient of a few generous gift givers) so I went to the VitaMix website. Sure enough, this is where the high power blender gets to shine.
I tossed in a bag of frozen strawberries and a half a cup of my sweetener simple syrup (from the video blog on Swerve Sweetener). I turned on my VitaMix and terrified the dog in the process and viola! I cannot describe how incredible the texture came out! Soft serve and sweet strawberry goodness.
One bag of strawberries has 3 servings (and 11 carbs each) so I do recommend having only a quarter of this recipe at one time. Honestly, it’s got enough tartness to it you won’t need to overdo it. Just a nice little dish will hit the spot!!
Strawberry Sorbet
Ingredients
- 10 oz frozen strawberries
- 2 tbsp fresh lime juice
- 2 tbsp no calorie sweetener of choice (optional)
- 1 scoop unflavored whey protein powder (optional)
Instructions
- Add ingredients to a high power blender and blend until smooth.
- Scoop out and serve. Put leftovers into a sealed container in the freezer.
