Slow Cooker Italian Chicken Thighs
I can’t think of a more creative name. I adapted this from a Kraft Food recipe called “Chicken Bolognese” and while that’s still mostly appropriate, it sounded fancier than it really is. Which isn’t always a bad thing, but sometimes my head just like to call things what they are.
This was a busy week. Preparing for the end of a season in my life and also for a vacation coming up next week. Our LifeGroup wanted to spend time helping in anyway we could for the tornado victims in Moore- so I made use of our slow cooker to eat dinner before heading out to volunteer.
Enter the Slow Cooker Italian Chicken Thighs. Real talk…this was one of my favorites. Mainly because I was very hungry and it was delicious, but also because of it’s simplicity. Very few (inexpensive) ingredients and using the slow cooker liner bag meant fastest cleanup ever!
Slow Cooker Italian Chicken Thighs
Ingredients
- 1/2 lb baby carrots
- 1 onion, wedged
- 4 pieces boneless, skinless chicken thighs
- 12 oz marinara sauce, low in sugar
- 1/4 cup low-fat Italian dressing
Instructions
- Place carrots and onion at the bottom of a slow cooker; top with chicken thighs.
- Drizzle the chicken with the dressing, and then the marinara sauce.
- Cook on low heat 7 hours. *Sprinkle with Parmesan cheese if desired.
This was so easy to make. The chicken just fell right apart and literally melted in my mouth.
