Pork Chops with Sweet Apples
Bariatric friendly pork chop recipe with warm Fall flavors using apple and thyme
Pork chops and sweet apples just seems to go together.
When I first heard about a recipe of pork chops and apples, I was intrigued and maybe confused. A dietitian I worked with swore I needed to put pork chops in a slow cooker and sliced apples over top. “The juice of the apple with cook down on the pork chops!” She said excitedly as I looked at her with a strange face.
So was completely right. I have since made this recipe baked with different seasonings or using a pork tenderloin in the Instant Pot.
I do feel like the glory of the pumpkin overshadows this classic Fall ingredient (and candle scent). While I’m a big fan of adapting a good pumpkin recipe to something that fits my health goals, I must say…the Apple Spice in my Scentsy warmer and my recent Pork with Sweet Apples reminds me: apples need some major attention!
My house smells awesome and my sweet tooth has been satisfied with a healthier option. Sounds like a cousin to pumpkin if you ask me.

If you haven’t had pork with apples, you might think this recipe sounds strange. If you have had pork with apples, you know it’s wonderful! This is a fancy meal that doesn’t require near as much work as you’d ever think.

Pork Chops with Sweet Apples - WLS Recipes
Ingredients
- 4 (4 oz) pork loin chops
- olive oil spray
- 2 small apples, cored and sliced
- 1 red onion, cut in wedges
- 2 cloves garlic, minced or pressed
- 1 tbsp cinnamon
- 2 tbsp natural no calorie sweetener
- 2 tbsp water
- 2 tsp fresh thyme (dried if needed)
Instructions
- Season pork with salt and pepper. Heat a large skillet to medium high heat, spray with olive oil and add pork chops. Cook approximately 4 minutes per side or until internal temperature reaches 145F. Remove pork from skillet and cover with foil to keep warm.
- Re-spray skillet and add onions, apples and garlic. Sauté together about 4-5 minutes, stirring occasionally.
- Meanwhile, combine sweetener, cinnamon, thyme and water together. Add to apple mixture. Stir to combine and let cook 2 minutes longer.
- Top pork with apple mixture and serve.
