I mentioned on my Classic Taco Salad recipe post that I often hesitate to post such simple recipes because I feel they aren’t flashy enough to share. I realized I never shared my Greek Yogurt Parfait recipe for the same reason!

Then I remember that often times, my most simple recipes are the ones my follows love the most. This recipe is SO simple and yet it keeps a Greek Yogurt parfait much lower than in carbs than many flavored options.

Using 0% plain Greek yogurt cuts the carbs tremendously and bonus the berries have such a yummy flavor after being thawed. Easy to keep the ingredients on hand and a delicious low carb snack or sweet treat that won’t derail you from your weight loss goals.

I personally use blueberries for my parfait but you can use any frozen berry or keep a bag of mixed frozen fruit on hand. It takes only 30 seconds to thaw the frozen fruit in the microwave. Small pieces of fruit go a long way too so that bag of fruit will last a LONG time and you will have kept your carbohydrates down!

Ingredients

  • 5 oz 0% fat, plain Greek yogurt
  • 2 packets Truvia
  • 1 tbsp frozen blueberries

Instructions

  • Place blueberries in a microwave safe bowl or mug. Defrost for 30 seconds.
  • Meanwhile stir truvia into plain Greek yogurt for sweetening. Add blueberries. Stir and enjoy.

  1. Yes, if it’s plain and you are adding these ingredients to it. Otherwise if it’s flavored I wouldn’t necessarily add more fruit to it. I hope I followed your question correctly!
