Cucumber Feta Rolls
Aren’t finger foods cute? I’ve always love appetizers. They allow for just a taste of something fun but very little commitment to choosing it for your entire meal. Not that I normally can’t handle commitment…but perhaps a little when it comes to what food I will fill up on at a meal. It’s gotta be worth it!
I know this is true for weight-loss surgery patients. After a gastric sleeve or gastric bypass, you want to make sure the meal is worth it. For nutrition, for weight-loss and of course, for flavor!
These little cucumber rolls are a fun mixture of flavor and texture, but not meant to be your meal. Pair with with a good protein source or create it as a fun dish to share at a party. Make it your own and use fresh dill or Laughing Cow CheeseĀ® instead of the reduced-fat feta I used in this version.
Cucumber Feta Rolls
Ingredients
- 1 large cucumber
- 4 oz reduced-fat feta crumbles
- 2 tbsp plain Greek yogurt
- 1 tbsp sun-dried tomato pesto
- 1 tsp dried oregano
- pinch of pepper to taste
Instructions
- Thinly slice cucumber using a mandolin or simple slicer if you have one. If not, you may try a vegetable peeler or a pairing knife.
- Add all other ingredients together, mashing the feta crumbles with the back of a spoon into the mixture.
- Scoop about a tablespoon of mixture into each cucumber slice, roll it and secure with a toothpick.
