Citrus Herb Salmon
Bariatric Surgery patients tend to do GREAT with fish and it’s so enjoyable to change up your meals with something like a flavorful pink salmon! In fact, I’m thinking if you don’t like fish you probably wouldn’t be reading this :)
This recipe is heavy on the dry seasonings and I loved it that way. I really enjoyed squirting the orange onto the fish after cooking and that brought a little bit of liquid to the “crust” texture of the seasonings as well as a sweet taste of the orange coming through more strongly.
Just like all meats, I prefer to buy salmon fresh BUT I’m also in Kansas so I admit I just get the frozen salmon and thaw it a day in advance. If you DO buy the frozen salmon, you’ll want to follow the package directions and remember to move the salmon from the freezer to the refrigerator. I believe my package said to take the individually wrapped salmon fillets out of the larger bag it came in.
Once the salmon is thawed, this dinner is seriously quick as a snap. It’s SO easy. Measure out your seasonings, press into the fish and move to the oven. Get your dishes caught up or even sweep the floor and catch up on your water intake because your part of dinner is over! Okay you might toss a bag of green beans in the microwave or stovetop. *Also, my patients can drink until the first bite of their meal hence why it’s okay to catch up on water while dinner is in the oven!

Citrus Herb Salmon
Ingredients
- 1/2 tbsp dried thyme
- 1/2 tbsp dried oregano
- 1 tsp sea salt
- 1 tsp black pepper
- 1 tbsp orange zest plus 2 tbsp juice
- 1 tbsp lemon zest
- 4 (4-5 oz) salmon fillets
Instructions
- Heat oven to 350F.
- Mix all the seasonings into a small bowl. Press approximately 1 tbsp seasoning mixture over each salmon fillet. Bake for 20-25 minutes depending on thickness of salmon.
- Remove from oven and let cool one minute. Plate with orange slice and squeeze juice of orange over salmon before eating.
