Last week I received a fun “summer snacking package” in the mail from Laughing Cow Cheese. I know you have heard of Laughing Cow! An abundance of yummy flavors (Creamy Swiss…Garlic and Herb…Queso Fresco & Chipotle) and the creamy consistency is the best. Ahem, especially at 35 calories a wedge! 

In the past I have used Laughing Cow for stuffed mushrooms…they are delicious and cuts out the need for cream cheese or other high fat ingredients. With this package, I was charged with making a fun new recipe with the products for the summer! I was sent three flavors, so I am challenging myself to come up with a fun new recipe for each.

First up: Queso Fresco & Chipotle Laughing Cow Cheese. A fun and rich flavor with a slight amount of heat. My taste testers loved it (yes- mom and husband). I decided to make a creamy steak topping for this first go around. Although I did put the leftovers on my husbands sandwich today…and will likely be adding it to our eggs tomorrow morning. So many great uses!

Queso Fresco & Chipotle LC + Fresh Cilantro + 2 chipotle peppers blended….on top of a sirloin steak. So good! I’d love for you to leave a comment with YOUR favorite way to have Laughing Cow! Outside of making meals…I love it with carrots : )

Cilantro Chipotle Creamy Steak Topping

Ingredients

  • 6 wedges Laughing Cow Queso Fresco & Chipotle can substitute light cream cheese
  • 3/4 cup fresh cilantro
  • 2 canned chipotle peppers, removed from sauce
  • 1 clove garlic
  • 1/4 tsp each salt and pepper

Instructions

  • In a food processor OR blender add Laughing Cow® Queso Fresco & Chipotle wedges, fresh cilantro, garlic clove, chipotle peppers, salt & pepper. Blend well.
  • Spoon cheese mixture into a plastic bag and place in fridge.
  • Meanwhile, prepare steaks as desired. *For a steak recipe see link in notes above.
  • Cut a corner of the plastic bag and pipe cheese on top of steaks. Garnish with cilantro if desired.

  1. I am not a steak eater, but mainly because I can’t get the tender consistency when I try to make it myself and most restaurants don’t have the tenderness to my liking either; however, I will have to give it a try with this Laughing Cow topping.

    I LOVE Laughing Cow cheese and buy probably three or four containers of it every couple of weeks. For a snack, I get a piece of fat free smoked turkey luncheon meat, put a wedge of French Onion Laughing Cow cheese, then a slice of 2% American cheese. I mash the sliced cheese on top of the Laughing Cow cheese in order to spread the wedge across the launcheon meat. Sometimes I put a row of spicey mustard and sometimes not. I then roll up the luncheon meat and I have the best tasting wrap (without carbs).

    I also like to microwave some turkey pepperoni’s for about 15-20 seconds on a plate in a single layer, which makes them crunchy (like potato chips), then dip them in a Laughing Cow cheese wedge.

    Canned chicken or canned Tuna: Instead of mixing up mayonnaise and mustard, just mix a wedge or two of Garlic and Herb or the Sun Ripened Tomato Laughing Cow cheese and add a chopped boiled egg and onion and you have a flavorful chicken or tuna salad.

  2. I mix a wedge of garlic herb laughing cow cheese with half a can of tuna (so 2 wedges for a whole can if you’re making it for 2) instead of high fat mayo. Super yummy!

    My friend Marla cuts a small avocado in half, removes pit and puts a wedge of laughing cow cheese in the hole then mashes it up inside the skin and uses it as a dip for red and green peppers.

  3. We love stuffed mushrooms so I’ll have to try laughing cow in those instead of the 1/3 less fat cream cheese I usually use!

  4. I would swap whipped light cream cheese if you have access to it – and around 1 tbsp per 1 wedge of Laughing Cow Cheese
