Pear, Goat Cheese & Candied Walnut Salad
This is one of my all time favorite salads. I use it in Pampered Chef shows. I use it for entertaining. I use it when I need to impress. Which isn’t often. It can be changed up from time to time. Different crumbled cheese. Different nuts. Different fruit. But this version is my favorite!

Ingredients
- 1 head head of romaine (or butter leaf/red leaf lettuce) approx 6 cups
- 1 pear, sliced
- 1 cucumber, sliced
- 2 oz goat cheese, crumbled
- 3 tbsp walnuts or pecans
- 1 tbsp natural no calorie sweetener
- 1 tsp cinnamon
- 1 tbsp water
- 3 tbsp light Honey Mustard dressing
Instructions
- Chop lettuce and add to a large salad bowl.
- Slice pears and cucumbers and add to bowl.
- Using a fork, crumbled goat cheese over the salad.
- Chop nuts and add to a saute pan. Add cinnamon, Splenda and a splash of water. Heat over medium high on the stove top and stir a few times. Remove once cinnamon mixture looks adhered to nuts. Add to salad.
- Add honey mustard dressing, toss and serve.
