Oven Roasted Cherry Tomatoes
Oven Roasted Cherry Tomatoes
There are so many things to love about cherry tomatoes! Could they be any more bariatric sized?! They are perfect for a small portion!
I love using cherry tomatoes as a simple side to pair with cheese but it also has endless possibilities when it comes to a quick dish. I’ll link a few other great cherry tomato recipes below, but for this recipe I simply tossed them with oil, vinegar, sea salt and pepper and roasted them. I highly recommend the fresh basil chopped and tossed over top when they come out of the oven! It’s a warm, low calorie version of a caprese salad without the dairy.
Pair this dish with grilled chicken, fish, lean beef or pork! It also reheats wonderfully!
