Nacho Chicken Chili, add toppings for extra fun
There really is no shortage of chili options. Not only for ground beef or turkey but even in the world of chicken chili! This Nacho Chicken Chili is another way to change the flavors but enjoy the comforts and filling protein of chili.
Thank goodness for that because chili is SUCH a great bariatric friendly meal. Not only is chili packed with protein and flavor, but the varieties are endless. You can easily freeze small portions of extras for a fast lunch in the future!
This nacho chili is fun because you can add toppings that make you think of nachos. A few sliced black olives or a little plain Greek yogurt (instead of sour cream). My husband and I both ate this chili with and without cheese and enjoyed it both ways!
Instant Pot® or Crockpot®
When it comes to a chicken recipe, I still often prefer a slow cooker option to pressure cooking. Chicken can easily turn tough in a pressure cooker and the liquid content is key!
The first time I made this recipe in the Instant Pot I used 2 cups of broth and 1 cup of fresh salsa. It was actually too much liquid and I used a slotted spoon to get the “chili” out. Fresh salsa has so much liquid I went down to one cup of broth.
In the end, I would still prefer this recipe to be slow cooked if I had the time! The pressure cooker works just fine if I didn’t.
Shredding or Chopping Chicken
I really love my Pampered Chef® tools for tricks like shredding and chopping. For this recipe I used my Salad Choppers and made it a diced texture of chicken.
If I were instead shredding chicken, I would use the Quick Shred tool instead. Those are two of my favorite kitchen items!

Nacho Chicken Chili
Equipment
- Pressure Cooker
- Slow Cooker
Ingredients
- 1 lb chicken breast boneless skinless
- 1 clove garlic minced
- 1 bell pepper red or yellow, diced
- .5 can pinto beans rinsed
- 1 cup salsa
- 1 tbsp chili powder
- .5 tsp garlic powder
- 1 tbsp cumin
- 1 cups chicken broth
- 1/2 tsp salt
Instructions
Slow Cooker
- Add all the ingredients to the bottom of a slow cooker. Cook on low for 6 hours.
- Remove chicken from slow cooker to a cutting board and shred. Return to cooker.
Pressure Cooker
- Add all the ingredient to the bottom of the pressure cooker. Cover and cook on high pressure for 12 minutes. Let pressure naturally release for 10 minutes and then release remaining pressure.
- Remove chicken from slow cooker to a cutting board and shred. Return to cooker.
This only took about 10 minutes to put everything in the crockpot. Very easy to make and turned out very tasty. Definitely adding this one to my collection !
