Mint Chocolate Chunk Ice Cream – WLS Sweets

The Cuisinart ice cream maker came into my home and my life just last week and I’ve already created something to remind me of a chocolate frosty, and now something just like mint chocolate chip ice cream!
I was “challenged” by a client (and friend) last week when she was really craving mint chocolate chip ice cream. How the heck could I re-create that? The more we talked, the more I felt confident this could happen.
I took nearly the same recipe from the chocolate frosty but omitted the cocoa powder, added a splash of mint extract and a decent amount of green food coloring. Which you don’t need at all, I just like the visual- I eat with my eyes people. And my mouth.
How to get chocolate chips when you don’t eat chocolate chips?! I decided to chop up a Pure Protein Chocolate Deluxe bar. Yes, you still know it’s a protein bar. You will not be deceived. But it absolutely does the trick of giving you chunks of chocolate flavor! You really only need about 1/3 of the protein bar. You could also use Quest’s Chocolate Brownie Bar.

Mint Chocolate Chunk Ice Cream - WLS Sweets
Ingredients
- 1/2 cup fat-free plain Greek yogurt
- 1/2 cup light whipped topping
- 2 tsp sugar-free chocolate syrup (coffee flavoring syrup)
- 2 tbsp sugar-free chocolate pudding mix
- 1/2 cup calorie free sweetener of choice (optional)
- 1 tsp mint extract
- 2 splashes green food coloring
- 1/3 chocolate flavored protein bar with more protein than carbohydrates such as Pure Protein Chocolate Deluxe
- 1 scoop unflavored or chocolate whey protein powder
Instructions
- Combine all ingredients in a bowl. Use a hand blender to mix everything well until lightly frothy (or mix well with a fork to incorporate ingredients until smooth).
- Follow directions for ice cream maker. Turn on ice cream maker and slowly pour in mixture or pour into a 2 quart container with a lid.
- Let mixture churn for 20 minutes or freeze for 6 hours or until firm.
- Add in chunks of protein bar in the last couple minutes of churning (if using machine) or stir in by hand
Dustin and I have been craving ice cream this week. I can’t wiat to bust out some of these ice cream recipes!!
Have you thought to use Carob chips? or Lily’s Sweets Stevia Sweetened Dark Chocolate Chips?
@Kimberly I have not! I’m not familiar with either one. As long as it’s well logged in a food journal and the day then sure! I personally like the simplicity of the bar because I only make this recipe from time to time. :)
Is light whipped topping Cool Whip type?
