Microwave Steamed Baby Carrots
Servings: 4 servings

Ingredients
- 2 cups baby carrots
- 4 tbsp water
- 1/4 tsp each salt and pepper
- butter spray, optional
Instructions
- Place baby carrots in a microwave safe dish with a lid - make sure lid has holes for venting. Add 4 tbsp of water and cover.
- Microwave for 5 minutes. Remove from microwave using an oven mitt and lift lid facing away to let out steam. Use a fork to piece carrots and test if as soft as desired.
- Strain water, add butter spray (if using) and salt and pepper to taste. Serve with a protein entree.

@emily oh my goodness!!! What bowl were you using? Did the lid have any venting? I’ve made it a million times and am terribly sorry for the scare!!
i made this and it worked fine. the list of ingredients say 1-cup of water. the instructions say 4 tablespoons. the latter is correct.

Hi Miss Wagner,
I had a question — I just found your recipe and tried it for the first time. But I was wondering, if I want to do just 1 cup of baby carrots at a time, with 2 tbsp of water I am assuming– how long would the cook time be? I did 5 minutes without thinking first about reducing the amount of time, and the carrots were a little overcooked and shriveled up. Do you think 3 minutes for 1 cup? Or 4 min? Please help!!
@Jane I would start with 3 minutes and you can always put them back in for one more minute. Microwaves vary too and I’ve noticed mine is not as powerful and takes longer. Also some baby carrots are more petite and that would also change the time. In the world of microwaving, I would say better to under do it and then add time!
I steamed carrots this way and had no problems. The containers did not explode and the carrots were delicious. I even added a little sprinkle of cinnamon afterwards instead of the salt, pepper and butter one time and it was delish too!
This works fine. It is important to allow venting- I didn’t have a lid with holes so I just put the lid slightly off-center to allow a Crack for venting.

Hello I need some diabetic diets that have 1000 calories for all 3 meals and like 40 carbs total. I use a microwave for all my cooking and it works well with what I make . Salad ,soups , fish, chicken , eggs, almond milk, oatmeal, fresh vegetables, chicken broth , all purpose seasoning,fresh garlic,olive oil in spray can is the best , red pepper/cayenne mix in my dishes , Cajun crawfish man on TV flavor ,,,,it’s amazing, and water with lemon in the fish soup those are the ingredients that I use so I need some help with some other recipes because I wanna mix it up you know , I lost 51 pounds with this way of life so far ,I need another 90 to loose si I’m back at a good g’healthy weight, plus I drink a lot of water and Bragg’s apple cider vinegar with the mother which is raw and unfiltered,,,the best it’s really health for diabetes, they had to stop my insulin ,,,that’s a real blessing from the man above , thank you and I enjoy all your recipes that you post . Congratulations on your weight loss and for no longer needing insulin! What an inspiration and a blessing! I would recommend finding a weight management dietitian licensed in your state to help you create individual eating plans like you’ve described. You can use the dietitian finder tool at eatright.org and see who is listed in your area! Many can take insurance and/or do telehealth.
