Okay, if you haven’t tried this classic slow cooker recipe…it’s darn well time.

I recommend using a pork tenderloin because it’s so lean. It will be a little more difficult to shred because of this, but it’s worth it to save on fat calories. Choose a low sugar barbecue sauce (less than 6 grams per serving is a good goal) and put it on the side to keep portions small. Dip your fork in the sauce for each bite instead of smothering. Yes, I know it’s better that way. There’s no argument there!

Easy Slow Cooker Pulled Pork

Ingredients

  • 1 lb pork tenderloin
  • 1 can beef broth (14.5 oz)
  • 1 whole onion, sliced
  • 1/2 cup barbecue sauce plus some for dipping

Instructions

  • Place pork tenderloin in the bottom of a slow cooker.
  • Mix barbecue sauce and beef broth together and then pour over pork tenderloin.
  • Let cook on Low for 6-8 hours. Shred with 2 forks and serve.

  1. Okay, I’m going to put this on tonight and let it cook all night and have it for lunch and dinner for the next few days. Sounds great! I made your little egg muffins too and those are a great, easy fast breakfast when you live a busy lifestyle like myself.

  2. Should I put the onion in when I put the broth and sauce in or is it just to put on the side? Sorry, I require specific instructions :/ Like “use pot holder to remove pan from oven” LOL

    I’m new to the bariatric, started with the nutritionist one month ago so I am still learning.. so forgive me if this is a dumb question. lol The nutritionist gave me guidance on how much calories, protein, carbs, fat to have daily but I don’t know what the limit is for sodium.. is there a daily number point I should try to stay within? I won’t see the nutritionist again until December so I can’t really ask..

  6. Great question! Your program may differ so certainly bring the question up when you do go back. The Dietary Guidelines for Americans are to limit sodium to 2,300 mg per day. I have found when patients focus on lean meats and veggies at their meals and start to decrease crackers/chips/packaged snacks the sodium comes down as well! Any time you can use fresh ingredients will always be idea. I don’t tend to stress patients to count sodium unless they are on a specific diet but to focus on quality food to support nutrition in several ways! I am excited for you!

    Is there a better measurement for “Can of beef broth”? I’ve been getting the College Inn containers as I just had it by itself on the liquid weeks
