Can I get a “heck yes!” for foil pack dinners?? Or as some lovingly call them, the “Hobo Dinner” method?!
I mean, come on, all your protein and veggies inside foil with virtually no cleaning when your finished? Someone deserves some major recognition for dreaming this up. It’s not me but I wish it were!
Bariatric patients – keep a good stash of foil pack dinners in your recipe box. Cook up 4 at a time and then you have three more meals ready packed for later in your week. Protein? Check. Veggies? Check. Feeling awesome? Check, check!

Servings: 4 servings

Ingredients
- 1 lb boneless skinless chicken breasts, cut into 1/2-inch-thick slices
- 2 tsp Italian seasoning
- 1 package frozen broccoli, cauliflower and carrot blend, thawed, drained
- 4 oz reduced-fat cheddar, cut into 1/2-inch cubes
Instructions
- Spray 4 large sheets of foil with cooking spray; top with chicken, Italian seasoning and vegetables. Fold to close.
- Grill 15 min. or until chicken is done. Cut slits in foil to release steam before carefully opening packets.
- Top ingredients (still in packets) with cheese. Don't re-seal. Shut lid grill and allow to cook for 3 minutes.
- Remove (with tongs) and let cool before serving.

You are right this is one good dish…everyone already has there plate/aluminum ready.. It taste great and its healthy.
