Chicken Bacon Ranch Protein Bowl
Bariatric friendly protein bowl using diced chicken, turkey bacon, Greek yogurt, seasonings and cheese
For a recipe packed with protein, use a package of turkey bacon and a pound of chicken! That is one way to take the protein content to the next level.
Bariatric surgery patients have a few things to like about this style of a recipe. We already touched on the protein power punch but the fact that it is diced means it’s easier to focus on small bites, cooks and reheats quickly and can easily be divided into smaller portioned meals for quick lunches or dinners later.
Another thing I like about this recipe is that you can swap the vegetable out for something else or skip the vegetable and eat them on the side. I used diced zucchini for my version but would eat this will bell peppers or broccoli too.
Chicken Bacon Ranch Protein Bowl
Ingredients
- 1 lb chicken breast boneless, skinless, diced into 1 inch cubes
- 1 package turkey bacon diced
- 1 cup Greek yogurt 0% fat, plain
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dill dried
- 2 medium zucchini diced, optional
- 1/2 cup shredded cheddar 2%
Instructions
- Start by dicing chicken and turkey bacon. Heat a large skillet or wok to medium high heat. Add chicken and bacon. Season with salt and pepper and cook until chicken is 160 F.
- Remove from skillet to a large mixing bowl. Add seasonings (garlic powder, onion powder, dill) and Greek yogurt. Mix well.
- Meanwhile add zucchini or any other vegetables to the skillet/wok and cook until desired doneness. Add chicken mixture back to the pan and add cheese. Stir to blend in cheese. Serve.
Why are so many of the recipes posted on here so high in sodium?
@Mary Anne Ross primarily the turkey bacon would be high in sodium. You could skip salt and omit the turkey bacon and/or shredded cheese if you are watching sodium. Many patients who are on a bariatric plan have small post-op portions and are avoiding process snacks (chips, crackers, etc) tend to do well with sodium. But those with a sodium restriction can make the adaptations they need to!
How much does a pack of turkey bacon weigh?
