Carrot Apple Slaw for Weight Loss Surgery Patients
Lower in fat and sugar than traditional Carrot Apple Slaw
I’ve always loved the traditional Carrot Apple Slaw you often see at summer cookouts and barbecues. Fresh and crunchy and feels healthier than crunchy potato chips or all the creamy potato or macaroni salads. After Bariatric Surgery those creamy dishes can leave you feeling awful not to mention get in the way of your goals.
I have good news though! The drawback of the carrot and apple salad is not really the carrot or the apple! It’s the raisins (so much sugar in dried fruits) and the high fat dressing it’s sitting in.
If you are willing to forgo the raisins and tweak the dressings to include plain Greek yogurt and a small amount of a light mayo…the flavors and the crunch are still very much alive in this lower calorie alternative! It’s still important to go lightly on the portion (eat two bites of lean meat to every one bite of this side dish) because even with our cuts this recipe has approximately 18 grams of carbohydrate per serving (about a half cup). STILL thats compared to the 45 grams of carbohydrate in the classic version!
I made this dish and had plenty to save for leftovers. I noticed the flavors becoming even more bold and enjoyable in the days after I fixed it than on day one! If you have also been missing salads because the greens don’t settle well; this dish is a great alternative to a leafy green salad. Grill up a bunch of chicken or pork chops and pair it with a small servings of carrot apple slaw for a yummy summer WLS meal!

Carrot Apple Slaw
Ingredients
- 10 oz shredded carrots
- 2 medium granny smith apples, cut into matchsticks
- 1/4 cup light mayonnaise
- 3 tbsp 0% fat, plain Greek yogurt
- 3 tbsp rice vinegar
- 3 packets Stevia or other natural no calorie sweetener
- 1/2 tsp salt
- 1/2 tsp celery seeds
Instructions
- In a medium bowl whisk together mayonnaise, Greek yogurt and rice vinegar. Add stevia, salt, celery seeds.
- Add in shredded carrot and apple. Toss well to cover in dressing.
- Refrigerate for 30 minutes or more for stronger flavors and serve.
Made this as a side to your pot roast with carrots, I LOVED it, hubby, well the jury is still out! He ate it tho! I had my surgery almost 3 yrs ago and he had it about 2 months ago so we are ” bariatric buddies” as our surgon calls us. I had gained back to 127 from 105 where I feel the best. Cooking for him, and getting 2 insta pots I lost down to 110 but now I see it coming back. Had a talk with my dr. and he put me on some meds to help with stress and emotional eating. Only been 2 days so I know these pills aren’t going to mean I don’t have to work at it….Giving it my best!
