Best of Food Coach Me Week
This week Mr W and myself are headed north for a long weekend at the lake with my family. Which means for meal planning sake- we had a “mini” week. In our house, we rarely ever repeat a meal. Every night is a gamble on how the meal is going to come out. Which is mostly exciting for me and on occasion…messes with my confidence. I must warn Mr W before eating of the following things:
“I’m not real sure about this one…”
“I mean, it smells good but I’m not sure…”
“I think the texture is going to be weird…”
“I changed too many things and now I don’t know about it…”
Yadda yadda yadda. You get the picture. He typically responds with an eye roll or a “yeah sure” which means that I’m being insecure for no reason. I will absolutely admit there have been some strange meals that will not be shared here (ahem the time I sautéed huge wedges of cabbage and served with chicken sausage and a mustard sauce….or anytime I’ve attempted a low carb waffle.)
So this being a short week, I decided to make it our “Best of” series. We pulled up the FoodCoachMe website, and even when the Facebook page first launched. We picked a handful of favorites and ended up with three. I mean, I never repeat meals. Especially three nights in a row. This was exciting.
So here are the picks for our mini week. I don’t know that I can say “Top Three” because that’s way too much pressure to put on myself to pick a top three. But these are three awesome recipes that we loved enough to repeat this week.
#1: Pizza Chicken
#3: Blue Cheese Stuffed Burgers
The Blue Cheese Stuffed Burgers were featured on a Facebook post but never on a blog.
Oh you can’t read that? Here’s what it says ; )
1. In a small bowl, mix together 1 tbsp chopped garlic, 2 tbsp chopped fresh basil and 1/4 cup blue cheese crumbles. Using your hands, form 4 small balls of blue cheese mixture.
2. Take 1 lb of 93% lean ground beef and divide into fourths. Place blue cheese mixture in the middle of ground beef and form the patty around it.
3. Grill (or use grill pan) each side for about 8 minutes. I topped mine with tomatoes and arugala! Yum! (This time I topped with sautéed onions)

I needed this post today. I hardly repeat recipes as well I had a major pinterest recipe fail last night and I was so disappointed! My husband kept reminding me of all the other great recipes–including the pizza chicken and the bread free chicken nuggets– I have made and shouldn’t be so discouraged. Tonight we are making your pizza stuffed burgers! Thank you for posting great healthy recipes.
