The post-op bariatric surgery diet is all about protein and veggies. I admit protein is easier for me to keep exciting and new by using new marinades, spices, rubs, slow cooker meals and more. Vegetables, on the other hand, are usually green beans, carrots, side salads…just about every week.
I usually don’t mind. I don’t grow tired of my traditional vegetables. But every now and again I hit a wall and start looking for a change! (I know a lot of you just plain don’t like vegetables and are trying find something new to try in hopes you’ll like something! And good for you…keep trying!)
Here is a simple, 3 ingredient recipe for a new way to try Brussels Sprouts. I loved them. I had the leftovers cold as a little snack the next day! *Confessions of a maternity leave Mom*
Bacon Wrapped Brussels Sprouts
Ingredients
- 10 Brussels Sprouts, cut in half
- 10 slices turkey bacon
- 2 tbsp honey mustard
Instructions
- Heat oven to 400 F.
- Place turkey bacon in a single layer in between two paper towels on a plate and microwave 2 minutes. *Bacon won't be fully cooked*
- Wrap Brussels Sprout halves in turkey bacon and add a dollop of honey mustard. Place with cut sides down on a baking sheet or baking stone.
- Cook in oven for 20 minutes. Remove, let cool slightly and serve.
