This is the second time I’ve made these turkey meatballs in the past week. They are easy to get together and packed with awesome flavor. I love that I could make a batch of 15 good sized meatballs and eat them for leftovers on my busy days! I actually made something else for dinner while these were cooking and placed them in a food container to eat for dinner the next day. I knew we had a busy day the next day, so I already had a good dinner ready to go. Planning ahead is planning to win!!

These meatballs are perfect after weight-loss surgery. If you’ve had the Gastric Sleeve or Gastric Bypass, you’ll appreciate these have no starches or grains in them. They are very low carb and packed with protein. This will ensure you are on your diet plan and are very filled and satisfied after your meal. I used ground turkey but any 90% lean ground meat will work. I find most patients prefer ground turkey after surgery! Turkey Spinach Meatballs

Ingredients

  • 1 lb 93% lean ground turkey
  • 1 cup baby spinach, chopped
  • 2 tbsp cilantro, chopped
  • 1 small onion, chopped
  • 1 tsp sea salt
  • 2 eggs, whisked
  • 1/4 cup reduced fat grated parmesan cheese

Instructions

  • Heat oven to 400 F.
  • In a large mixing bowl, add all the ingredients. Use either a large spoon or your hands to combine the mixture well. Line a cookie sheet with foil.
  • Use a medium sized cookie scoop to scoop even sizes of mixture into your hands and roll into a ball. Make 5 rows of 3 meatballs.
  • Bake for 30 minutes. Remove from oven and use tongs to remove meatballs to serving plate or to a food container for later eating.

    These were great! However I replaced sea salt with ranch seasoning. My toddler and I loved them
