Great ideas! Thank you as it is easy to get inside and get distracted. Before you know it it is too easy to load your cart with much less healthy options!! I also like their pickled asparagus and use it on the inside of rolled up ham spread with Laughing Cow cheese. It’s both a great appetizer to take to potlucks as well as an easy lunch option.

My biggest issue with shopping at Costco is that the packaging is always so large and I live alone. I have tried to get others where I live (senior apartment complex) to go in with me on these larger purchases. No one seems to want what I want when I want it! I have limited freezer space so freezing a lot is out of the question. I like to have a selection of proteins but I shop at the local grocery stores because I want the smaller quantities.
As for smaller quantities, I have found that if you ask the butcher, they will generally cut a roast, steak, etc., into more manageable sizes. Just the other day, I saw a beautiful roast but it was probably 5 lbs. I asked if I could have 1/3 of the roast and the butcher had no problem cutting for me! Crockpot here I come. I also purchase other meats at the meat counter as opposed to the prepackaged meats so that I am getting the amounts that are manageable for me.
Some of my favorite things to make with ground beef (and you could use ground turkey, chicken or pork):
1) I make Taco Bell Peppers! I brown the meat, add my homemade taco seasoning and stuff either 1/2 a bell pepper or several mini bell peppers. Then I top the peppers with Jack cheese and bake in the oven at 350 for 10-15 minutes. I have found that if I steam the peppers in the microwave for just a minute or so, 10-15 minutes is plenty of time.
2) I brown the meat and add sloppy joe mix and stuff bell peppers or slightly hollowed out zucchini.
3) I make a chili with the meat and chili seasonings and stuff bell peppers.

Thanks for the Roadmap to Costco! It will be another month before I’m able to start solid foods, but looking forward to trying some of these Costco products. I’d also love to see a Walmart and Fred Meyer’s shopping guides.
