Honey Mustard Roasted Brussel Sprouts
Bariatric surgery patient or not….the hunt for healthy vegetable side dishes that aren’t canned green beans is a real struggle.
I love adding vegetables to my protein entree but doesn’t it feel like all the energy goes into the entree that you don’t really want to make a whole other recipe for a side dish?
I’m all about an easy side veggie and usually use my microwave steamer bowl to steam frozen green beans or baby carrots. Even a bag of pre-chopped cauliflower steamed in the microwave, drained, add salt and pepper and some Laughing Cow Cheese and use a hand blender for creamy mashed cauliflower fast! Brussel Sprouts are another favorite of mine. I hated them growing up…mostly because they were canned or steamed or mushy? I’m sure I had them once and decided that was true for life ;) Once I tried them roasted as an adult…I realized the possibilities of flavor and texture in this funny looking veggie!
This time around I added flavor using grill seasoning (McCormicks® Montreal Steak in my case) plus some honey mustard…mustard not dressing. The sprouts can roast while you make dinner on the stovetop or grill!
Honey Mustard Roasted Brussel Sprouts
Ingredients
- 1 lb brussel sprouts, trimmed and halved
- 2 tbsp honey mustard (mustard not dressing)
- 1/2 tbsp grill seasoning
- 1/4 tsp each salt and pepper
Instructions
- Heat oven to 425.
- Meanwhile add all ingredients to a bowl and toss to coat evenly. Move to a rimmed baking sheet lined in foil or a baking stone.
- Roast for 20 minutes. Remove, allow to cool before serving.

All the honey mustard I have looked at has very high sugar content. Is this still ok?
@Teresa good question! I did not use a honey mustard salad dressing. This type of mustard has around 10 calories per tsp and 0 grams of sugar. This recipe calls for 2 tbsp which is 60 calories and then divided by 4 servings makes it 15 calories per serving from the mustard.
